Heat a small amount of olive oil in a medium-sized skillet over a moderate temperature. Introduce the onion into the skillet and cook, stirring occasionally, until it becomes soft and loses its initial firmness, taking around 5 minutes to achieve this.

Combine the onion with lamb, egg, bread crumbs, garlic, salt, and pepper in a bowl, gently mixing everything together. Split the mixture into six equal parts and shape each portion into a ball before placing it in the refrigerator to chill until needed.

In another bowl, blend together goat cheese, olive oil, basil, and oregano until they are perfectly merged; cover the bowl with a lid and refrigerate for 5 minutes to allow the flavors to meld.

Prepare an outdoor grill by preheating it to a medium-high heat and lightly brush the grill surface with oil.

Working on one lamb ball at a time, create an indentation in the center of the ball using your thumb. Fill this indentation with a generous spoonful of the goat cheese mixture. Gently mold the lamb around the cheese, forming a burger-like patty. Repeat this process with each ball of lamb mixture.
