Separate the eggs into two distinct groups. In one bowl, whisk together egg yolks and 1/2 of the sugar until well combined. Add vanilla to the mixture and continue whisking until it becomes light in color, taking approximately 5 minutes.

In another clean bowl, beat the egg whites until they form soft peaks. During this process, slowly add salt and remaining sugar to the mixture until fully incorporated.

Gently fold the egg whites into the egg yolk mixture using a gentle, sweeping motion.

Divide the batter into two equal parts, filling one half of the pastry bag with each portion. Pipe 3 1/2 inch long fingers, spaced 1 1/2 inches apart in rows on the parchment paper. Continue with the second half of the batter, following the same pattern.
