Ingredients

- 2 tablespoons sesame oil
- 2 teaspoons minced garlic
- 8 ounces sweet potato noodles
- 4 ounces lean beef, cut into 2-inch long strips
- 6 ounces fresh spinach
- salt and ground black pepper to taste
- 1 tablespoon vegetable oil, divided
- 1 small sweet onion, thinly sliced
- 4 mushrooms, stemmed and sliced
- 1 small carrot, cut into matchsticks

Combine soy sauce, sugar, sesame oil, and minced garlic in a bowl until the sugar is fully incorporated into the sauce.

Heat a large amount of salted water to its boiling point. Cook sweet potato noodles in the boiling water, stirring occasionally until they are cooked through but still retain some firmness, taking around 6 to 7 minutes. Drain the noodles under cold running water and transfer them to a separate bowl, adding 2 tablespoons of the prepared sauce and mixing well.

Rinse the beef under a strong flow of running water until its juices run clear. Combine the beef with 1 tablespoon of the prepared sauce in a bowl, mixing them together.

Put a pot of water to its boiling point. Cook the spinach in the boiling water until it is just wilted, taking around 1 minute. Immediately transfer the spinach to a bowl of cold water to stop the cooking process, allowing it to cool down quickly. Remove excess water from the spinach and place it in a large serving bowl, seasoning with salt and pepper to taste.

Heat 1 teaspoon of oil in a large skillet over medium-high heat. Cook the onion until it becomes fragrant and crispy, taking around 1 to 2 minutes. Transfer the cooked onion to the bowl with the spinach. Heat another 1 teaspoon of oil in the same skillet. Cook the mushrooms in the hot oil until they are lightly browned but still retain some firmness, taking around 1 to 2 minutes. Add the cooked mushrooms to the onion mixture. Heat a final 1 teaspoon of oil in the same skillet. Cook the carrot in the hot oil until it is lightly browned but still crisp, taking around 1 to 2 minutes. Add the cooked carrot to the onion mixture.

Cook and stir the beef in the same skillet until it is browned, taking around 1 to 2 minutes. Add the cooked beef to the onion mixture. Cook and stir the noodles in the same skillet until they are heated through, taking around 1 to 2 minutes. Add the cooked noodles to the beef-onion mixture. Pour the remaining sauce over the beef-noodles mixture and mix everything together using your hands.
