Korean Spicy Red Pepper Cucumbers
Ingredients
  • 1 teaspoon vegetable oil
  • 2 tablespoons sesame seeds
  • 2 tablespoons kochujang (Korean hot sauce)
  • 1/4 cup white vinegar
  • 1 tablespoon sesame oil
  • 1 green onion, chopped
  • 1 cucumber, halved, seeded and thinly sliced

Preheat a small saucepan over medium heat, allowing the vegetable oil to warm up. Introduce the sesame seeds into the saucepan and cook until they transform into a golden brown hue, accompanied by a popping sound, approximately 3 minutes. \nTransfer the saucepan contents to a large bowl and set aside.

Combine kochujang, vinegar, sesame oil, and green onion in the bowl with the toasted sesame seeds. Mix until a harmonious blend is achieved, incorporating the sliced cucumber into the dressing as well.
