Korean Beef Soft Tacos
Ingredients
  • 1 (3 pound) beef chuck roast, trimmed
  • 1/2 medium onion, diced
  • 1/2 cup dark brown sugar
  • 1/3 cup soy sauce
  • 10 cloves garlic
  • 1 medium jalapeno pepper, diced
  • 1 (1 inch) piece fresh ginger root, peeled and grated
  • 2 tablespoons seasoned rice vinegar
  • 1 tablespoon sesame oil
  • salt and ground black pepper to taste
  • 16 (6 inch) corn tortillas
Instructions
1
Insert a large, boneless piece of beef into the slow cooker with a medium-sized onion, a spoonful of brown sugar, a few tablespoons of soy sauce, some minced garlic, a sliced jalapeño pepper, a small piece of fresh ginger, a drizzle of rice vinegar, a sprinkle of sesame oil, a pinch of salt, and a few grinds of black pepper.
2
Cover the top of the slow cooker with a lid and let it cook for an extended period, allowing the meat to become tender and easily break apart with a fork. The cooking time will be significantly longer, typically 10 hours on the Low setting or 8 hours on the High setting.
3
Transfer the beef to a large, flat cutting board and use two forks to gently pull the meat apart into smaller pieces.
4
Return the shredded beef back into the slow cooker and mix it with the rich, savory juices that have accumulated during cooking.
5
Serve the tender beef alongside soft corn tortillas.
