- 3 kohlrabi bulbs, trimmed and peeled
- 4 slices bacon, cut into small pieces
- 1/2 medium yellow onion, sliced
- 1 tablespoon olive oil, or as needed
- salt to taste
- 2 tablespoons butter
- 1/3 cup grated Parmesan cheese
- 2 tablespoons minced fresh parsley

Slice kohlrabi into delicate, long strands using a spiralizer.

Heat a large skillet over medium heat and introduce the bacon, adding it to the pan. Allow the mixture to brown, with the bacon starting to develop a crispy texture and the onion becoming sweetly caramelized but avoiding any signs of burning, approximately 10 to 12 minutes. Transfer the mixture to a small bowl, reserving one tablespoon of the reserved bacon fat in the skillet.

If there is insufficient bacon fat, add a suitable amount of oil to reach one tablespoon of the desired grease.

Add the sliced kohlrabi to the skillet and sprinkle with a pinch of salt. Cook over medium heat, stirring occasionally, until the kohlrabi begins to lose its crispness and becomes tender, taking around 12 to 14 minutes. Stir in the melted butter until it is fully incorporated.

Add the previously prepared bacon and onion mixture to the skillet, stirring in half of the Parmesan cheese.

Serve the dish immediately, topping it with the remaining Parmesan and a sprinkle of parsley.
