Kielbasa and Sauerkraut Pasta
Ingredients
  • 12 ounces dry ziti pasta
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound kielbasa sausage, sliced into 1/2 inch pieces
  • 12 ounces sauerkraut, drained and rinsed
  • 2 tablespoons prepared Dijon-style mustard
  • 1 pinch cayenne pepper
  • 1/4 cup white wine
  • 2 tablespoons chopped fresh parsley
Instructions
1
Begin by filling a large container with salted water, then place it on the stovetop and bring the liquid to a rolling boil.
2
Add your pasta of choice to the boiling water, making sure it's not overcooked. The ideal texture is al dente, which should take around 8 to 10 minutes. Once done, carefully pour the pasta into a colander and let the excess water drain off.
3
In a separate cooking vessel, heat a generous amount of olive oil over medium heat on your stovetop.
4
Add sliced onions and bell peppers to the skillet, stirring constantly as they cook until the onion becomes translucent. Introduce minced garlic into the mixture and continue to stir, allowing it to cook for a few minutes.
5
Add sliced kielbasa to the skillet and stir, cooking until it starts to develop a rich brown color. This process should take around 8 minutes.
6
Introduce sauerkraut, mustard, and a pinch of heat into the skillet mixture.
7
Stir everything together, allowing the flavors to meld and combine for about 4 minutes.
8
Pour in a small amount of wine into the skillet, stirring gently as it heats through.
9
Add chopped parsley to the mixture and stir once more.
10
Toss cooked ziti pasta with the kielbasa and sauerkraut mixture, combining everything together.
11
Serve the dish hot, straight from the skillet.
