Combine graham cracker crumbs with softened butter, mixing until well combined, then press into the bottom and partially up the sides of a 9-inch springform pan; chill in the refrigerator while you prepare the filling.

Preheat your oven to 300 degrees Fahrenheit (150 degrees Celsius). Place a shallow pan half full of boiling water on the lower rack to prevent cracking.

To create the filling, combine cream cheese, sugar, lime zest, and cornstarch in a large bowl using an electric mixer until the mixture is smooth and even. Gradually add eggs one at a time, blending just until well combined. Add Key lime juice with the mixer on low speed, then finish mixing by hand to avoid overbeating. Pour the batter into the prepared crust.
