  • 2 teaspoons garlic powder, divided

  • 1 teaspoon ground coriander

  • 2 eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped onion
  • salt and pepper to taste
  • 3 tablespoons tomato paste
  • 1 pound frozen riced cauliflower, thawed and drained
  • 1 1/2 cups grated Cheddar cheese, divided

To begin, preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius). Next, take an 11x7-inch baking dish and spray it with a non-stick cooking spray to ensure easy removal.

Heat up a large, non-stick skillet over high heat and cook ground beef in the hot pan until it's browned and crumbly, taking about 5 to 7 minutes. Add a blend of spices including chili powder, onion powder, garlic powder, cumin, coriander, salt, and pepper to the skillet and stir until these flavors are evenly distributed throughout. Continue cooking for an additional 4 to 5 minutes, allowing the aromas to meld together.

In a separate bowl, whisk eggs and cream until well combined. Add this mixture to the cooked ground beef and stir until everything is fully incorporated.
