Ingredients
- 1 cup coconut butter
- 1 cup chopped macadamia nuts
- 5 eggs, room temperature
- 1 tablespoon stevia sugar substitute (such as Truvia®)
- 2 teaspoons baking soda
- 3/4 teaspoon salt
- 2 1/2 tablespoons lemon juice
Instructions
1
First, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius for those using metric measurements). Next, take a moment to prepare your loaf pan by lining it with parchment paper.
2
In the food processor, combine coconut butter and macadamia nuts, then process them on high speed until you achieve a mixture that is partially buttery and partially chunky, with the nuts finely ground. Switch to medium-low speed and add 1 egg; continue processing until well combined, taking around 10 seconds to achieve this.
3
Now, add the remaining eggs one at a time, blending each addition until the mixture is smooth and creamy. This should take around 10 seconds per egg, with a total processing time of approximately 30 seconds.
4
Once you've finished adding the eggs, turn off your food processor and add stevia, baking soda, and salt; blend these ingredients together on medium-low speed for 10 to 15 seconds. Be sure to scrape down the sides of your bowl as you work, ensuring everything is well incorporated.
5
Now that your mixture is blended, pour in some lemon juice and reduce the speed to low; blend well. Scrape down the sides of your bowl again, then mix everything together one final time to ensure it's thoroughly combined.
6
With your mixture now ready, pour it into the prepared loaf pan.
7
Finally, pop your loaf into the preheated oven and bake until a toothpick inserted into the center comes out clean, taking around 35 minutes to achieve this. Remove your loaf from the oven and let it cool before transferring it to a wire rack.
