  • 1 pound chicken cutlets, pounded to 1/4-inch thickness
  • salt and freshly ground black pepper to taste
  • 2 large eggs
  • 1 teaspoon Dijon mustard
  • 2/3 cup almond flour
  • 1/3 cup freshly grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 cup avocado oil
  • 1/4 pound shaved deli ham
  • 1 cup shredded Swiss cheese

Preheat your oven to the desired temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).

Season chicken cutlets with a pinch of salt and pepper, then set them aside for the time being.

To create a binding agent, whisk eggs and Dijon mustard together in a shallow dish. In another shallow dish, combine almond flour, Parmesan cheese, and garlic powder.

Dip chicken cutlets into the egg mixture, allowing any excess to fall away. Next, coat them with the almond flour mixture, placing them on a plate once done.

Heat oil in a large skillet over medium-high heat. Add the chicken cutlets and cook until they are golden brown, taking approximately 3 to 4 minutes. Flip them over and continue cooking until the chicken is no longer pink inside and the juices run clear, adding another 3 to 4 minutes.
