- 1/4 cup sour cream
- 1/2 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
- 1 tablespoon melted butter
- 1 cup frozen mixed berries
- 1 tablespoon stevia-erythritol sweetener (such as Truvia®)

To begin, preheat your oven to 350 degrees Fahrenheit (or 175 degrees Celsius). Next, place the pecans in a food processor and chop them into tiny pieces. Add the sweetener, cinnamon, and nutmeg to the food processor and process for a few more seconds. Transfer the mixture to a separate bowl and combine it with melted butter, stirring until well incorporated.

Press the crust mixture firmly into the bottom of a brownie pan with the divider removed.

In a separate large bowl, use an electric mixer to beat an egg until it becomes light and fluffy. Gradually add the cream cheese, mixing one ounce at a time until smooth. Combine the egg mixture with sweetener, sour cream, vanilla extract, and almond milk in the bowl. Continue beating until the filling is smooth and well combined. Stir in melted butter to enhance the mixture's texture.

Pour the filling over the crust mixture in the brownie pan. Insert the divider into the pan to maintain its shape.

Bake the cheesecake bars in a preheated oven for approximately 35 minutes.

While the cheesecake is baking, heat a small saucepan over medium heat. Add mixed berries and sweetener to the saucepan and bring it to a simmer, about 5 minutes. Stir the berries occasionally to help release their natural juices and crush some of them with a spoon to facilitate the formation of a liquid. Continue cooking for an additional 10 minutes.

Once the cheesecake bars have cooled in the brownie pan, about 1 hour, pour the warm berry sauce over them.
