Ingredients
- 3/4 cup shredded mozzarella cheese
- 2 ounces cream cheese
- 1 large egg
- 1/3 cup almond flour
- 2 teaspoons baking powder
- 1/4 teaspoon garlic powder
- 1/2 cup shredded Cheddar cheese

Combine mozzarella cheese and cream cheese in a microwave-safe container. Microwave on high, 20 seconds at a time, until the mixture is smooth and melted.

In a separate bowl, whisk an egg until it's fully incorporated. Then, add almond flour, baking powder, and garlic powder to the egg mixture. Mix until everything is well combined.

Gradually incorporate the mozzarella mixture into a dough-like consistency, which may feel sticky. Next, add shredded Cheddar cheese to the dough and mix until well combined.

Cover the dough with a sheet of plastic wrap, then fold the wrap over the dough. Gently shape the dough into a ball and refrigerate for 30 minutes.

Preheat your oven to 425 degrees F (220 degrees C). Grease a baking sheet or line it with parchment paper.

Once the dough is chilled, remove it from the refrigerator and unwrap. Divide the dough into 4 equal pieces and shape each piece into a ball. Cut each ball in half to form the top and bottom bun. Place the dough, cut-side down, on the prepared baking sheet.

Bake the buns in the preheated oven for 10 to 12 minutes, or until they're golden brown and set.
