Ingredients
- 3 tablespoons olive oil
- 1 pound cubed pork shoulder roast
- 1 pound cubed beef stew meat
- 4 cups chicken broth
- 1 1/2 pounds bone-in chicken parts
- 2 cups diced potatoes
- 1 cup diced carrots
- 1 (15 ounce) can stewed tomatoes
- 1 cup smoky barbeque sauce
- 1 cup green beans
- 1 cup diced okra
- 1 cup corn
- 3/4 cup diced onion
- 1 green bell pepper, seeded and diced
- 1/2 cup diced celery
- 1/4 cup apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 3 cloves garlic, chopped
- 3 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 dash hot pepper sauce, or to taste
Instructions
1
Heat a generous amount of olive oil in an enormous 8-quart cooking vessel over medium heat; carefully sear pork and beef cubes in the sizzling hot oil, working in batches if necessary to ensure even browning.
2
Next, add a splash of chicken broth, some juicy chicken pieces, an assortment of potatoes and carrots to the pot. Stir everything together and bring the mixture to a rolling boil, then gradually decrease the heat to a low simmer. Allow the stew to cook for 1 hour, filling your home with its savory aroma.
3
After an hour of simmering, stir in a medley of stewed tomatoes, barbeque sauce, green beans, okra, corn, onion, green bell pepper, celery, apple cider vinegar, Worcestershire sauce, garlic, and a few fragrant bay leaves. Add a pinch of salt, some black pepper, and a dash of hot pepper sauce to give the stew an extra kick.
4
Return the stew to its rolling boil, then reduce the heat once more and let it simmer for another hour. As the stew cooks, its flavors will meld together in perfect harmony.
5
Finally, just before serving, remove the bay leaves and portion out the stew into individual bowls.
