- 1 small onion, shredded
- 3 eggs
- 1 teaspoon salt
- 2 tablespoons all-purpose flour, or as needed
- 1/2 cup vegetable oil

Combine diced potatoes and chopped onion in a bowl, mixing until they're well incorporated. Next, add beaten eggs to the mixture and season with salt as desired, adjusting the amount of flour accordingly to achieve a cohesive texture. Using your hands, shape small portions of the mixture into flat patties.

In a large skillet, heat a generous amount of vegetable oil over medium heat until it begins to shimmer. Carefully place the patties into the hot oil, being mindful not to overcrowd the skillet. Cook for 5-8 minutes on the first side, or until they're golden brown and crispy. Flip them over with a spatula and continue cooking for another 5-8 minutes, or until they're golden on the other side.

To remove excess moisture from the cooked patties, place a colander lined with 2 paper towels over a bowl or sink. Carefully pour the cooked latkes into the colander, allowing them to drain before serving hot.
