Kate's Peach Cake
Ingredients
  • 1 teaspoon butter, or as needed
  • 2 tablespoons white sugar, or as needed
  • 2 cups white sugar
  • 1 cup butter, softened
  • 4 eggs
  • 1 1/2 teaspoons vanilla extract
  • 3 cups all-purpose flour, divided
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh peaches - peeled, pitted, and chopped
Instructions
1
Preheat your oven to 325 degrees Fahrenheit, or 165 degrees Celsius. Next, take a 10-inch tube pan and grease it generously with butter before sprinkling sugar evenly over the surface.
2
Using an electric mixer, cream together 2 cups of sugar and 1 cup of butter in a large bowl until you achieve a light, fluffy texture. Add eggs one at a time, ensuring each egg is fully incorporated before moving on to the next.
3
In a separate bowl, whisk together 2 3/4 cups of flour, baking powder, and salt until well combined. Gradually add the dry ingredients to the butter mixture, stirring until everything comes together seamlessly.
4
Take a few minutes to coat 1/4 cup of peaches in the remaining flour, then gently fold them into your cake batter. Pour the entire mixture into a prepared 10-inch tube pan.
5
Place the cake in your preheated oven and bake until a toothpick inserted into the center comes out clean, taking anywhere from 1 to 1 hour and 10 minutes. Remove the cake from the oven after this time has passed, allowing it to cool for 10 minutes before flipping it onto a wire cooling rack to finish cooling completely.
