Kale Salad with Sweet Cashews
Ingredients
  • 1/2 cup cashews
  • 1/2 cup white sugar
  • 1 bunch kale, cut into thin ribbons
  • 5 tablespoons soy sauce
  • 1/2 cup raisins

Preheat the oven to its highest temperature setting, which is usually marked as 325 degrees F (or 165 degrees C).

Take a baking sheet and sprinkle the cashews evenly onto it.

Place the cashews in the preheated oven and let them roast until they turn a nice brown color, approximately 5 minutes later.

Meanwhile, put the sugar in a small saucepan and place it over medium heat on your stovetop. Stir the sugar constantly until it melts, all while keeping an eye on the cashews in the oven.

As soon as the sugar has fully melted and the cashews have finished toasting, remove them from the oven and pour them into the saucepan with the sugar. Stir everything together until the cashews are evenly coated with the melted sugar.

Take the baking sheet and spread the sugar-coated cashews out evenly to let them cool completely, approximately 15 minutes later.

Take a bowl and gently massage the kale with soy sauce until it becomes soft and tender.

Add the raisins to the bowl with the kale and soy sauce, and then fold in the sugar-coated cashews.

Cover the bowl with a lid or plastic wrap and refrigerate it for 30 minutes before serving.
