Ingredients
- 1 1/3 cups water
- 2/3 cup quinoa
- 1 bunch kale, torn into bite-sized pieces
- 1/2 avocado - peeled, pitted, and diced
- 1/2 cup chopped cucumber
- 1/3 cup chopped red bell pepper
- 2 tablespoons chopped red onion
- 1 tablespoon crumbled feta cheese
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 1/2 tablespoons Dijon mustard
- 3/4 teaspoon sea salt
- 1/4 teaspoon ground black pepper

Combine 1 and 3/4 cups of water with quinoa in a saucepan and bring to a rolling boil. Gradually decrease the heat to a lower setting, cover the saucepan, and let it simmer for 15-20 minutes or until the quinoa is tender and has absorbed all the water. Remove from heat and let it cool down.

Prepare a steamer by placing a perforated basket into another saucepan with 1 inch of water. Bring the water to a boil, then add the kale and cover the saucepan with a lid. Steam the kale for approximately 45 seconds, or until it's hot and tender. Transfer the steamed kale to a large serving plate.

Top the steamed kale with a mixture of cooked quinoa, diced avocado, sliced cucumber, bell pepper strips, thinly sliced red onion, and crumbled feta cheese.

Mix together olive oil, freshly squeezed lemon juice, Dijon mustard, sea salt, and black pepper in a bowl until well combined. Pour the dressing over the salad to add flavor.
