Ingredients
- 1/3 cup brown sugar
- 2 tablespoons chili powder
- 2 tablespoons paprika
- 2 teaspoons dry mustard
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 (12 fluid ounce) can beer
- 1 (3 pound) whole chicken
Instructions
1
Preheat the outdoor grill to a medium-high heat setting, equivalent to 375 degrees F (190 degrees C).
2
Mix together brown sugar, chili powder, paprika, dry mustard, salt, and black pepper in a small bowl. Place the can of beer in the center of a plate, leaving about half full.
3
Under cold running water, rinse the chicken thoroughly and discard any giblets or neck that may be present. Pat the chicken dry with paper towels, making sure it is completely dry.
4
Position the whole chicken over the can of beer with its legs on the bottom side, ensuring it remains upright. Sprinkle 1 teaspoon of the seasoning mix into the top cavity of the chicken, taking care not to spill any seasonings into the can.
5
To prevent foam from forming in the can, rub the remaining seasoning mix all over the surface of the chicken.
6
Carefully place the chicken on the preheated grill, standing upright over the can of beer. Close the lid and cook the chicken until it reaches an internal temperature of 165 degrees F (74 degrees C), indicated by no longer being pink at the bone and juices running clear, approximately 1 hour 15 minutes.
7
Using an instant-read thermometer, check the internal temperature of the thickest part of the thigh, close to the bone. If it reads 165 degrees F (74 degrees C), the chicken is cooked.
8
Remove the chicken from the grill and discard the beer can. Cover the chicken with a double layer of aluminum foil, allowing it to rest in a warm area for 10 minutes before slicing.
