  • 1/4 cup all-purpose flour, or as needed
  • 1 quart beef stock
  • 1 pinch ground black pepper to taste
  • 1 pinch fresh thyme leaves, to taste

Melt butter in a cooking vessel over an intermediate temperature until it bubbles vigorously. Introduce the mushrooms and sprinkle with salt to enhance flavor. Allow the mixture to reduce, losing its liquid content, approximately 20 minutes.

Combine the flour with the mushrooms; cook and stir constantly for 5 minutes. Introduce 1 cup of beef stock, stirring vigorously until it is fully incorporated, then pour in the remaining stock and blend well. Add a pinch of black pepper and thyme to give it an aromatic touch. Decrease the heat to a lower level and simmer until it thickens, stirring frequently, approximately 30 minutes.
