  • 2 tablespoons heavy cream
  • 2 teaspoons very finely minced shallots
  • 4 ounces cold unsalted butter, cut into 1-inch cubes
  • 1 pinch cayenne pepper
  • salt to taste

Combine wine, lemon juice, cream, and shallots in a saucepan. Heat it up over medium-high heat until the mixture starts to bubble vigorously.

Gradually decrease the heat to a more moderate level and let it cook for around 4-5 minutes, or until the liquid has reduced significantly.

Next, switch to the lowest possible heat setting and use a whisk to incorporate 2 small pieces of butter into the mixture. Continue stirring constantly until these initial pieces have fully dissolved and melted.

Continue adding small portions of butter, one piece at a time, while continuously whisking the mixture until it reaches a thick and rich consistency, taking around 4-6 minutes to achieve.
