- 4 kummelweck dinner rolls, split
- 1/4 cup extra-hot prepared horseradish, or to taste

Prepare the beef by sprinkling it generously with salt and black pepper to enhance its flavor.

Heat a substantial amount of oil in a large, deep skillet over medium-high heat. Sear the beef roast in hot oil until it develops a rich, even brown color on all sides, taking around 4 to 5 minutes per side. Use a thermometer to check the internal temperature of the beef, aiming for 125 degrees F (52 degrees C). Remove the beef from the skillet and set it aside to relax.

Take the skillet off the heat source and mix in a small amount of flour until it's fully incorporated into the oil, allowing its flavor to dissipate. Gradually pour in cold beef broth, then return the skillet to the heat source over medium-high heat. Stir in some balsamic vinegar, black pepper, and any remaining juices from the plate where the beef rested; cook until the mixture has thickened slightly, approximately 5 minutes. Add a pinch of salt to taste.

Slice the sirloin into thin, uniform strips by cutting against the grain. Place a generous portion of meat onto the base of each roll. Spread a thick layer of horseradish sauce on top of the meat, then place the top bun over it. Serve with a side of jus for dipping into its rich flavors
