Ingredients
- 3 tablespoons unsalted butter
- 3 tablespoons packed brown sugar
- 2 bananas, peeled and halved lengthwise and crosswise
- 2 fluid ounces rum
- 1 fluid ounce banana liqueur
- 2 pinches ground cinnamon
- 2 scoops vanilla ice cream
- 2 small sprigs of mint
Instructions
1
Heat butter and brown sugar in a skillet over medium-high heat until the butter dissolves and the mixture starts to simmer, approximately 3-5 minutes.
2
Next, place sliced bananas in the skillet, cut-side down. Allow them to cook until they develop a light golden color on the bottom, roughly 30 seconds; flip and continue cooking until the other side is also golden brown, around 30 seconds. Turn off the heat source.
3
With the heat turned off, carefully pour in the rum and banana liqueur. Re-ignite the heat to medium-high or high; cook until the alcohol catches fire and flames erupt, usually within 1-3 minutes. Be cautious when adding cinnamon to the mixture as it will ignite; once the flames die down, remove from heat.
4
Divide scoops of vanilla ice cream into two bowls. Spoon the banana mixture over the top of each bowl and garnish with fresh mint leaves.
