- 2 skinless, boneless chicken breast halves - cubed
- 1 (8 ounce) can pineapple tidbits with juice
- 1/4 cup shredded coconut
- 2 tablespoons brown sugar
- 1 teaspoon jerk seasoning mix
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon chili powder
- 1/2 teaspoon crushed red pepper flakes
- salt and ground black pepper to taste
- 4 ounces dry fettuccini noodles

Preheat the skillet over medium heat, adding a generous amount of olive oil to it. Cook and stir the chicken until it reaches a fully cooked state, where no pink remains and juices flow freely, typically taking 7 to 10 minutes.

Next, introduce the pineapple along with its juice into the skillet, followed by the coconut, brown sugar, jerk seasoning, cinnamon, chili powder, red pepper flakes, salt and pepper.

Subsequently, lower the heat to a low setting and let it simmer for 15 minutes, allowing all the flavors to meld together.

Meanwhile, bring a large pot of water to a rolling boil and season it lightly with salt.

Add the pasta to the boiling water, cooking it until it reaches an al dente state, which is usually around 8 to 10 minutes.
