- 1 pound skinless, boneless chicken thighs, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 5 dried red pepper pods
- 1 1/2 tablespoons rice vinegar
- 2 tablespoons rice wine
- 3 tablespoons white sugar
- 3 tablespoons soy sauce
- 2 teaspoons cornstarch
- 3 green onions, thinly sliced

Preheat the deep-fryer or large saucepan to a scorching hot temperature of 375 degrees F (190 degrees C).

Mix the eggs in a bowl until they become silky and smooth. Combine 1/2 cup of cornstarch with the eggs, stirring until there are no lumps left. Then, coat the chicken evenly in the cornstarch-egg mixture.

Fry the chicken cubes in batches, one by one, into the sizzling hot oil. Cook until the chicken is a beautiful golden brown and starts to rise to the surface, taking about 3 minutes. Transfer the fried chicken onto a plate lined with paper towels.

Heat the vegetable oil in a large cooking vessel over extremely high heat. Introduce the dried peppers into the hot oil and cook for approximately 30 seconds, allowing their color to brighten. Add the chicken cubes and fry until they turn a deep, rich golden brown. Combine the vinegar, rice wine, sugar, soy sauce, and 2 teaspoons of cornstarch in a small bowl. Stir until the ingredients are well combined. Pour the mixture into the wok, and let it boil until the sauce thickens and loses its cloudy appearance, taking about 2 minutes. Garnish with green onions before serving.
