Ingredients
- 1/4 cup pine nuts
- 1 (15 ounce) can chickpeas (garbanzo beans), drained with 1/4 cup of the liquid reserved
- 1/4 cup lemon juice
- 1/4 cup olive oil, plus more for drizzling
- 2 tablespoons tahini
- 4 cloves garlic, minced
- 2 1/4 teaspoons ground cumin
- 1/4 teaspoon paprika
- 2 pinches salt
- 1/2 teaspoon crushed peppercorns

Preheat a compact cooking vessel over an intermediate temperature setting. Sear pine nuts in the same cooking vessel, periodically agitating, until they emit a pleasant aroma and start to darken slightly, approximately 3 to 5 minutes.

Combine chickpeas, the liquid left over after draining, fresh lemon juice, one-quarter cup of high-quality oil extracted from olives, tahini paste, minced garlic, ground cumin, paprika powder, salt, and crushed black peppercorns in a food processor until the mixture is well blended.

Introduce the toasted pine nuts into the hummus, either by mixing them in or sprinkling them on top. Finish the dish with a light drizzle of olive oil before presenting it.
