  • 2 pounds ground beef
  • 2 medium onions, chopped
  • 1 (8 ounce) package sliced fresh mushrooms
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 6 large eggs, beaten

Preheat a large skillet over medium-high heat, allowing the oil to warm up. Introduce ground beef into the skillet and stir constantly until it reaches a browned, crumbly state, approximately 8 minutes. Discard any remaining oil that accumulates at the bottom of the skillet, then incorporate sliced onions, button mushrooms, and minced garlic into the mixture. Gradually decrease the heat to medium, cover the skillet, and cook until the onions have lost their firmness and turned a pale color, roughly 5 minutes. Add a handful of fresh spinach leaves to the skillet and sprinkle with a pinch of nutmeg, dried oregano, salt, and pepper; continue to cook until the spinach has reached a heated state, around 3-4 minutes.

Lower the heat to medium-low. Crack eggs into the skillet and stir gently until they have fully incorporated with the beef, spinach mixture, and other ingredients. Continue cooking for an additional 4-6 minutes, or until the eggs have reached your desired level of doneness.
