Joanie's Passover Brownies
Ingredients
  • 1/2 cup butter
  • 2 (1 ounce) squares unsweetened chocolate, chopped
  • 2 eggs
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons matzo meal
  • 1/2 cup potato starch
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1/2 cup semisweet chocolate chips
Instructions
1
Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius.
2
Next, take a moment to lubricate an 8x8 inch square baking dish with some cooking spray.
3
In a small saucepan, heat the butter over medium heat until it reaches your desired temperature. Remove from the stovetop and combine with the unsweetened chocolate, stirring until smooth. Set it aside for now.
4
In a separate bowl, whisk together the eggs and sugar using an electric mixer until you achieve your desired consistency after about 5 minutes. Gradually decrease the speed to low, then add in the chocolate and butter mixture, followed by a dash of vanilla.
5
In another bowl, combine the matzo meal, potato starch and salt in a straightforward manner. Using a spoon, gently fold these dry ingredients into the chocolate mixture until you achieve an even blend.
6
Mix in any optional walnuts or chocolate chips at this stage.
7
Pour the entire mixture into your prepared baking dish and spread it out evenly.
8
Bake for 25 minutes in the preheated oven, or until your brownies are dry on top and start to detach from the sides.
