Jo's Campfire Mash
Ingredients
  • 8 beef frankfurters
  • 3 red potatoes, cubed
  • 2 (15 ounce) cans baked beans
  • salt and pepper to taste
  • 1 teaspoon hot pepper sauce, or to taste
Instructions
1
Preheat a large skillet over medium-high heat and spray with non-stick cooking spray. Dissect each frankfurter into 5 or 6 portions and cook in the skillet until it develops a rich brown color.
2
Transfer the cooked frankfurters to a separate plate and reserve for later use.
3
Next, reapply non-stick cooking spray to the skillet and resume heating. Introduce the potatoes into the skillet, cover it with a lid, and cook over medium heat for 10 to 15 minutes, periodically stirring the ingredients.
4
Once the potatoes have achieved a tender yet slightly caramelized texture, add the beans and cooked frankfurters back into the skillet. Season with a pinch of salt, a few grinds of black pepper, and a dash of hot sauce. Heat the mixture until it reaches a warm and inviting temperature.
