Ingredients
- 8 (6 inch) flour tortillas
- 1 pound skinless, boneless chicken breast halves - cut into strips
- 2 small red bell peppers, cut into strips
- 2 teaspoons Jamaican jerk seasoning
- 1/8 teaspoon ground black pepper
- cooking spray
- 4 slices canned pineapple, chopped
- 1 tablespoon vegetable oil
- chopped fresh cilantro
- lime wedges
Instructions
1
First, preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit or 175 degrees Celsius.
2
To begin preparing the dish, wrap tortillas in aluminum foil and place them in the oven to warm up.
3
In a large container, combine chicken breast, sliced bell peppers, jerk seasoning powder, and ground black pepper. Set the mixture aside for later use.
4
Next, heat a large skillet over its highest heat setting, which is medium-high. Spray the pan with cooking spray to prevent food from sticking.
5
Add chunks of pineapple to the skillet and cook until they turn a golden brown color, taking anywhere from 4 to 6 minutes.
6
Remove the pineapple chunks from the pan and set them aside for now.
7
Return the skillet to its stovetop and add a small amount of vegetable oil. Add chicken breast and sliced bell peppers to the pan, then cook and stir constantly until the chicken is no longer pink, approximately 6 minutes.
8
Add the cooked pineapple chunks back into the pan and stir everything together.
9
Serve the fajita mixture in warmed tortillas, garnished with chopped cilantro and a squeeze of fresh lime juice.
