Ingredients
- 1 (15.25 ounce) package white cake mix
- 1 (3 ounce) package strawberry-flavored gelatin mix (such as Jell-O®)
- 1 cup vegetable oil
- 4 large eggs
- 3/4 cup mashed fresh strawberries
- 3 tablespoons all-purpose flour
- 1/2 (16 ounce) package powdered sugar
- 3/4 stick unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
1
Preheat your oven to a medium-high temperature of 350 degrees Fahrenheit (175 degrees Celsius).
2
Next, take three 8-inch round cake pans and lightly coat them with a non-stick cooking spray to prevent the cakes from sticking.
3
In a separate bowl, whisk together the cake mix, gelatin mix, oil, eggs, strawberries, and flour until you get a smooth batter.
4
Divide the cake mixture evenly among the prepared pans, making sure to fill them about 2/3 full.
5
Place the cake pans in the preheated oven and bake for 20 to 30 minutes, or until a toothpick inserted into the center of each cake comes out clean.
6
While the cakes are baking, allow them to cool completely on a wire rack, which should take around 30 minutes.
7
In the meantime, prepare the frosting by mixing together confectioners’ sugar, butter, and vanilla extract in a small bowl using a hand mixer.
8
Chill the frosting mixture in the refrigerator for about 20 minutes to allow it to firm up.
9
Once the frosting has chilled, whip it with a hand mixer until it becomes light and fluffy.
10
Now that the cakes are cool, you can assemble them by spreading a layer of frosting on top and sides.
11
Place two cake layers together, followed by a generous amount of whipped frosting in between.
12
Spread the remaining frosting over the top and sides of the cake, creating a smooth and even layer.
