  • 12 fresh green beans, cut into 1/2 inch pieces
  • 1 small green bell pepper, cut into thin strips
  • 1 small zucchini, cut into thin strips
  • 3 large eggs, lightly beaten
  • 3/4 cup all-purpose flour
  • 3/4 cup chicken stock
  • 2 teaspoons soy sauce
  • 1 teaspoon vegetable oil
  • 1/4 teaspoon toasted sesame oil

Combine chicken, shredded cabbage, sliced carrots, chopped green onions, blanched green beans, diced green bell pepper, and grated zucchini in a large bowl. In another container, whisk eggs, flour, chicken broth, and soy sauce until well combined. Pour the egg mixture over the chicken mixture and toss to ensure everything is evenly coated.

Combine vegetable oil and sesame oil in a skillet over medium heat. Using about 1/4 cup of the batter, create a circular shape in the skillet, approximately 2 1/2 inches in diameter. Cover the skillet and cook for 4 minutes, or until the bottom is golden brown. Flip the fritter over and continue cooking for an additional 4 minutes, or until cooked through. Remove from heat and drain on paper towels.
