Rinse the kombu with a damp cloth to remove any impurities. Cut it into 1-inch cubes and submerge them in a saucepan filled with water. Place the saucepan over high heat, allowing it to reach a rolling boil; then decrease the heat to a low simmer and let cook for 20 minutes. After removing it from the heat, allow it to sit for a short while before proceeding with your recipe. Strain the kombu and its liquid through a fine-mesh sieve or strainer before incorporating it into your dish.
