  • 1 tablespoon mirin (Japanese sweet wine)
  • 2 teaspoons white sugar
  • 1 teaspoon fish soup stock (such as HonDashi®)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1 pound ground turkey
  • 1 pound ground pork
  • 2 eggs, beaten
  • 1 1/2 cups panko bread crumbs

Preheat your oven to a high temperature of three fifty degrees Fahrenheit, or two seventy-five degrees Celsius.

In a large skillet, heat a combination of corn oil and sesame oil over medium-high heat. Add sliced carrots, diced green bell pepper, and chopped onion; cook and stir constantly until they become tender, approximately five minutes. Introduce soy sauce, sake, mirin, sugar, and fish-based broth into the skillet; stir until well combined. Incorporate minced garlic and grated ginger into the mixture. Allow it to cool, taking anywhere from five to ten minutes.

In a large bowl, combine ground turkey, ground pork, and beaten eggs; mix until the ingredients are fully incorporated. Add the cooled carrot mixture to the bowl, stirring until well combined with the bread crumbs.

Press the turkey mixture evenly into a loaf pan. Place it in the preheated oven and bake until browned, taking approximately thirty minutes.

Increase the oven temperature to four hundred degrees Fahrenheit, or two hundred degrees Celsius. Continue baking until an instant-read thermometer inserted into the center of the loaf reads at least one sixty degrees Fahrenheit, taking another thirty minutes.
