  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon mirin
  • 1 tablespoon sake
  • 1/2 pound beef ribeye steak, thinly sliced
  • 1 tablespoon sesame seeds, or to taste
  • 2 green onions, thinly sliced, or to taste
  • 2 teaspoons pickled ginger (beni shoga), or to taste
  • 1 sheet dried seaweed, cut into strips, or to taste

Divide the onion in half lengthwise and carefully remove the central, most unappealing portion. Slice the remaining halves into very thin pieces.

Melt a generous amount of oil in an enormous cooking vessel over extremely high heat. Introduce the onion slices into this scorching hot oil and vigorously stir until they begin to develop a rich, caramelized hue, approximately 30 seconds. Gradually decrease the heat to a relatively low temperature; add water, soy sauce, brown sugar, mirin, and sake, allowing these flavors to meld together harmoniously, around 3 minutes.
