Jamie's Hearty Minestrone Soup
Ingredients
  • 3 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 2 onions, chopped
  • 2 cups chopped celery
  • 5 carrots, sliced
  • 4 cups tomato sauce
  • 2 cups chicken broth
  • 2 cups water
  • 1/2 cup red wine
  • 3 zucchinis, quartered and sliced
  • 2 cups baby spinach, rinsed
  • 1 (15 ounce) can green beans
  • 1 cup canned kidney beans, drained
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • salt and pepper to taste
  • 1/2 cup seashell pasta
  • 2 tablespoons grated Parmesan cheese for topping
  • 1 tablespoon olive oil
Instructions
1
Acquire all necessary ingredients and prepare them for use.
2
Heat a generous amount of olive oil in a substantial cooking vessel over a moderate-low heat setting. Sizzle minced garlic in the hot oil until it releases its fragrance, taking about 2 to 3 minutes.
3
Introduce sliced onions into the pan and cook them, stirring occasionally, until they become translucent and lose their raw appearance, taking around 4 to 5 minutes.
4
Add diced celery and carrots to the pan and sauté them for about 1 to 2 minutes, stirring constantly.
5
Pour in a can of crushed tomatoes, broth, and water; bring the mixture to a rolling boil, stirring frequently. Add red wine to the pot and lower the heat to a low setting.
6
Stir in grated zucchini, chopped spinach, green beans, kidney beans, dried basil, oregano, salt, and pepper. Allow the soup to simmer until it reaches a heated-through consistency, taking around 30 to 40 minutes.
7
Simultaneously, fill a medium-sized cooking vessel with water and bring it to a boil. Cook seashell pasta in the boiling water, stirring occasionally, until it reaches a tender yet firm texture, taking about 7 to 8 minutes. Drain the pasta and set it aside.
8
Place two tablespoons of cooked seashell pasta into individual serving containers. Ladle the hot soup over the pasta and sprinkle with grated Parmesan cheese.
9
Drizzle a small amount of olive oil over the dish to serve.
