Jamaican Spice Raisin Bread

  • 3 1/4 cups all-purpose flour
  • 4 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1 pinch salt
  • 1 egg
  • 1 cup milk
  • 1/3 cup beer (such as Heineken®)
  • 1 3/4 cups brown sugar
  • 1/2 cup melted butter
  • 1 teaspoon browning sauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime juice
  • 1 cup raisins
  • 1/2 cup brown sugar
  • 1/2 cup water

Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius). To prevent sticking, lightly coat two 8x4-inch loaf pans with a non-stick cooking spray.

In a separate bowl, combine the flour, baking powder, cinnamon, nutmeg, allspice, and salt. Set this mixture aside for later use.

In a separate mixing bowl, beat the egg until it's well-mixed. Gradually whisk in the milk, beer, and 1 3/4 cups of brown sugar until it's fully incorporated. Make sure the brown sugar is completely dissolved.

Next, add the softened butter to the mixture and blend until smooth. Incorporate the browning sauce, vanilla extract, and lime juice into the mixture.

Now, slowly add the flour mixture to the wet ingredients. Stir until there are no dry lumps remaining.

Pour the batter into the prepared loaf pans and bake in a preheated oven until a toothpick inserted into the center comes out clean, approximately 1 hour.

Once the bread is nearly done baking, prepare a glaze by combining 1/2 cup of brown sugar and water in a small saucepan. Bring the mixture to a boil over high heat, then reduce the heat and simmer until the sugar is thick and syrupy, about 5 minutes.

Remove the bread from the oven and pour the glaze over it. Return the bread to the oven for an additional 5 minutes of baking time. Finally, remove the bread from the pans and transfer it to a wire rack to cool completely.
