Jalapeno Sweet Potato Bean Cakes

  • 1/2 cup reduced fat sour cream
  • 1 small fresh jalapeno pepper, minced
  • 2 teaspoons fresh lime juice

  • 1 tablespoon olive oil
  • 4 green onions, thinly sliced
  • 2 fresh jalapeno peppers, finely diced
  • 6 cloves garlic, pressed
  • 1 tablespoon ground cumin
  • 2 (14.5 ounce) cans black beans, drained and rinsed
  • salt and black pepper to taste
  • 2 cups grated raw sweet potato
  • 1/2 cup plain dried bread crumbs
  • 1 large egg, lightly beaten

Position the oven rack approximately six inches away from the heat source and activate the broiler. Apply a thin layer of olive oil to a baking sheet.

Prepare the sauce by combining sour cream, diced jalapeño pepper, freshly squeezed lime juice, and a pinch of salt in a small bowl. Cover the mixture and refrigerate for later use.

Prepare the cake mixture: Heat olive oil in a small skillet over medium heat. Sauté the finely chopped green onions in hot oil until they become tender, approximately one minute. Add diced jalapeño peppers, minced garlic, and ground cumin to the skillet; cook until fragrant, about thirty seconds.

Transfer the green onion mixture to a large bowl. Combine with black beans and mash using a fork until coarsely chopped. Season with salt and pepper to taste. Mix in diced sweet potato, bread crumbs, and beaten egg until the ingredients are well incorporated. Divide the mixture into eight portions, shape into patties, and place on the prepared baking sheet.

Bake under the preheated broiler for eight to ten minutes. Flip the patties over and continue broiling until crispy, approximately three minutes more. Serve with the prepared sauce.
