Jalapeño Stuffed Meatloaf
Ingredients
  • 1 pound ground beef
  • 2/3 cup bread crumbs
  • 2 eggs, whisked
  • 2 teaspoons salt, divided
  • 1 1/2 teaspoons ground black pepper, divided
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup grated Cheddar cheese
  • 3 jalapeno peppers, seeded and diced
  • 1 teaspoon garlic powder
  • aluminum foil
  • 3 tablespoons barbeque sauce, or as needed
  • 2 tablespoons grated Cheddar cheese, or to taste

Firstly, preheat your oven to the desired temperature of 350 degrees F (175 degrees C).

Next, combine ground beef, bread crumbs, eggs, 1 teaspoon of salt, and 1 teaspoon of pepper in a large mixing bowl until everything is well incorporated.

Now, press roughly 3/4 of the meat mixture into the bottom and up the sides of a loaf pan, leaving a small space in the middle.

After that, combine cream cheese, 1 cup of Cheddar cheese, jalapeno peppers, garlic powder, the remaining 1 teaspoon of salt, and the remaining 1/2 teaspoon of pepper in a separate bowl until everything is well blended.

Then, press the cream cheese mixture into the space in the middle of the loaf pan. Cover this with the remaining meat mixture, pressing along the edges to seal it tightly.

Finally, cover the loaf pan with aluminum foil and bake in the preheated oven until it is no longer pink in the center, taking around 30 to 40 minutes.

To check if it's done, insert an instant-read thermometer into the center and make sure it reads at least 160 degrees F (70 degrees C).

Once done, remove the meatloaf from the oven and brush it with barbeque sauce. Sprinkle 2 tablespoons of grated Cheddar cheese on top.

Set the oven rack about 6 inches from the heat source and preheat the oven's broiler.

Place the meatloaf under the broiler and cook until the barbeque sauce is bubbly and the cheese is melted, taking around 2 to 3 minutes.
