Jalapeño Spinach Casserole

  • 1 (9 ounce) package frozen chopped spinach
  • 2 tablespoons water
  • 1/4 cup evaporated milk, or as needed
  • 2 tablespoons salted butter
  • 1 tablespoon all-purpose flour
  • 2 tablespoons chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup shredded jalapeno Jack cheese
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon red pepper flakes
  • salt and ground black pepper to taste

Start by heating the butter in a small pan over a very low heat setting.

Add the bread crumbs to the pan and continue cooking, stirring occasionally, until the butter is evenly distributed throughout the bread crumbs.

Remove the mixture from the pan and set it aside for now.

Next, prepare a microwave-safe container by adding the spinach to it.

Add water to the container and cover it with a lid.

Cook the spinach in the microwave on high for 7 1/2 minutes, stirring every minute or so.

After the cooking time is up, carefully pour the spinach mixture into a measuring cup to drain off any excess liquid.

Add enough evaporated milk to the spinach mixture to bring it up to a total volume of 1/2 cup.

Set the spinach mixture aside for now.

Add a spoonful of flour to the pan and continue cooking, stirring constantly, until the mixture forms a smooth paste.
