Jalapeno Black Bean Burgers

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and minced
  • 1 teaspoon dried oregano
  • 1/2 red bell pepper, diced
  • 1 ear corn, kernels cut from cob
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1/2 cup plain bread crumbs
  • 4 teaspoons chili powder
  • 1 tablespoon minced fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 cup all-purpose flour, or as needed
  • 1 tablespoon olive oil, or as needed

Preheat your stove by turning the heat to a medium setting; warm 1 tablespoon of olive oil in a cooking vessel until it starts to shimmer.

Cook the onion, garlic, jalapeno pepper, and oregano in the skillet until they become soft and translucent, taking around 8 to 10 minutes to achieve this.

Next, add the red bell pepper and corn to the skillet and continue cooking until they are tender. This should take an additional 2 to 4 minutes.

In a separate container, crush the black beans using a spoon or masher until they are in a smooth consistency.

Combine the cooked vegetable mixture, bread crumbs, chili powder, cilantro, cumin, and salt with the mashed black beans. Mix everything together until it forms a cohesive mixture.

Divide this mixture into 4 equal portions and shape each portion into a patty.
