Jackie's Meatloaf
Ingredients
  • 1 pound ground beef
  • 2 eggs, beaten
  • 1 cup panko bread crumbs
  • 3/4 cup ketchup, divided
  • 1 tablespoon salt-free seasoning blend
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • salt to taste
  • ground black pepper to taste
Instructions
1
Preheat the oven to its highest temperature setting, which is 350 degrees Fahrenheit. Next, lightly coat a baking dish with a thin layer of cooking spray to prevent the meatloaf from sticking.
2
In a large mixing bowl, combine 1 pound of ground beef, 2 eggs, 1 cup of panko breadcrumbs, and 1/2 cup of ketchup. Use your hands to mix the ingredients together until they are just combined, taking care not to overmix. Add a pinch of salt-free seasoning blend, garlic powder, onion powder, and a few grinds of black pepper to give the meatloaf its flavor.
3
Use your hands to shape the mixture into a loaf shape, and place it on the prepared baking dish. Drizzle the top of the meatloaf with any remaining 1/4 cup of ketchup.
4
Place the meatloaf in the preheated oven and bake for 1 hour, or until it reaches an internal temperature of 160 degrees Fahrenheit. This will ensure the meatloaf is cooked through and safe to eat.
