- 2 tablespoons chili powder
- 1 teaspoon salt, or to taste
- 1 teaspoon ground cardamom
- 1 teaspoon dried parsley
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cumin
- 1 small onion, chopped
- 1 cup water
- 5 tablespoons coconut milk
- 1/4 cup chopped fresh cilantro

Combine the jackfruit with a blend of spices including curry powder, chili powder, salt, cardamom, parsley, turmeric, and cinnamon in a bowl. Allow the mixture to sit for 10 minutes.

Heat oil in a pan over medium heat and sauté the garlic, ginger, and cumin until they are fragrant, approximately 1 minute. Add the onion and cook, stirring constantly, for an additional 2 minutes. Then add the seasoned jackfruit, water, and coconut milk to the pan; stir until well combined.

Reduce heat and let the mixture simmer for 7 minutes.

Turn off the heat source, add fresh cilantro to the pan and mix until well incorporated. Serve the dish hot.
