Jack Daniel's BBQ Sauce

  • 1 head garlic
  • 1 tablespoon olive oil
  • 1 1/3 cups dark brown sugar
  • 1 cup pineapple juice
  • 2/3 cup water
  • 1/4 cup teriyaki sauce
  • 1 tablespoon soy sauce
  • 3 tablespoons lemon juice
  • 3 tablespoons minced white onion
  • 1 tablespoon bourbon whiskey
  • 1 tablespoon crushed pineapple
  • 1/4 teaspoon cayenne pepper

Firstly, heat your oven to the desired temperature of 325 degrees F (165 degrees C).

To prepare the garlic, carefully slice off about half an inch from the top of a whole head. Remove any excess roots to ensure it sits flat, and then gently peel away the outer layers of its papery skin. Make sure to leave enough skin intact so that the cloves remain secure.

Next, place the garlic into a small baking dish and drizzle it with olive oil. Cover the dish either with a lid or aluminum foil to allow for even roasting.

Roast the garlic in your preheated oven until it reaches a soft and fragrant state, which should take around 1 hour.

While the garlic is roasting, combine brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce in a saucepan. Bring the mixture to a boil over high heat before reducing the heat to low and keeping it at a gentle simmer.

Once the sauce has cooled slightly, use a spoon to mash the sides of the roasted garlic until it releases its pasty and fragrant goodness.

Measure out 2 teaspoons of the roasted garlic and whisk it into the saucepan until well combined. Set aside any remaining roasted garlic for future use.

Add lemon juice, onion, bourbon whiskey, pineapple, and cayenne pepper to the saucepan. Bring the mixture to a simmer once again and cook until it reduces by half, resulting in a thick and syrup-like consistency. This process should take around 40 to 50 minutes.
