Italian Zucchini Sandwiches
Ingredients

  • 2 cloves garlic, peeled and coarsely chopped
  • 1 pinch crushed red pepper flakes
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon white sugar
  • 1 (14.5 ounce) can diced tomatoes
  • salt and pepper to taste
  • 1 tablespoon butter
  • 2 medium zucchini, cubed
  • 1 pinch red pepper flakes
  • salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 4 (6 inch) French or Italian sandwich rolls, split

To prepare marinara sauce, warm olive oil in a cooking vessel over an intermediate temperature (see Cooking Tip). Introduce garlic, basil, and spicy red pepper flakes; cook and stir for a short period until aromatic. Combine sugar, vinegar, salt, and pepper in the mixture; then add tomatoes with their liquid. Simmer over a low heat setting for 15 minutes. Transfer to a food processor or blender and blend until the sauce is smooth.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

Melt butter in a cooking pan over an intermediate heat. Cook the zucchini in butter until it's nicely browned and tender. Add a pinch of red pepper flakes, salt, and pepper to the zucchini for flavor.

Fill each sandwich roll with a generous amount of the zucchini mixture, followed by about 1/4 cup marinara sauce per roll. Add a handful of shredded mozzarella cheese on top.

Close the rolls and wrap them individually in aluminum foil.

Bake for 15 minutes in the preheated oven, until the bread is warm, the rolls are soft, and the cheese is melted.
