- 3 zucchinis, shredded
- 1 zucchini, diced
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 tablespoons grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 1 1/2 cups all-purpose flour
- 2 cups vegetable oil for frying

Combine the eggs in a bowl using an electric beater until they become fully incorporated and smooth. Mix in the grated and chopped zucchini, followed by adding a pinch of salt, pepper, Parmesan cheese, and fresh basil leaves. Gradually incorporate the flour by adding it a little at a time, stirring continuously between each addition until no lumps remain.

Preheat the oil in a large frying pan to 375 degrees F (190 degrees C).

Carefully pour the batter into the hot oil in small portions, taking care not to overfill the pan. Cook until the fritters turn golden brown on both sides, approximately 4 minutes. Remove from heat and place on a paper towel-lined plate before serving
