Ingredients
- 1 teaspoon olive oil
- 2 cups sliced mushrooms
- 2 tablespoons olive oil
- 6 (3/4 inch thick) pork loin chops
- 1 cup chopped onion
- 2 cloves garlic, crushed
- 1 (14.5 ounce) can diced Italian tomatoes, undrained
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup water
- 6 large green bell pepper slices
Instructions
1
Preheat the cooking vessel by heating 1 teaspoon of oil over a moderate temperature. Introduce sliced mushrooms into the skillet and stir constantly until they become tender, taking approximately 5 to 7 minutes. Transfer the mushrooms to a separate container and reserve for later use.
2
Next, warm 2 tablespoons of oil in the same skillet over a moderate temperature. Introduce pork chops to the skillet and cook until they develop a brown color, requiring about 3 1/2 to 5 minutes on each side. Transfer the pork chops to a separate serving plate.
3
Remove excess oil from the skillet, leaving only 1 tablespoon of drippings. Introduce sliced onions and garlic into the skillet and stir constantly until they soften and become translucent, approximately 5 minutes. Combine cooked onions with minced garlic to create a harmonious mixture.
4
Add diced tomatoes, fresh basil, dried oregano, salt, and pepper to the skillet mixture. Introduce pork chops back into the skillet and simmer until they become tender, no longer pink in the center, approximately 45 minutes. If the mixture becomes too dry, add water to maintain a suitable consistency.
5
Place a slice of bell pepper on top of each pork chop. Combine reserved mushrooms with the skillet mixture and continue to simmer until bell peppers are tender, taking approximately 5 to 10 minutes.
