  • 1/2 cup kosher salt
  • 1/2 cup sugar
  • 1 quart water
  • 2 (1 pound) pork tenderloins
  • 1/2 cup orange juice concentrate, thawed
  • 3 large cloves garlic, minced
  • 2 teaspoons Italian seasoning

Combine salt and sugar in the water, stirring until they're fully dissolved.

Add the meat to the bowl and allow it to marinate for 45 minutes.

Next, rinse the meat under cold water and gently pat it dry with a paper towel.

In a small saucepan, heat the orange concentrate over low heat until it's reduced by half.

Add minced garlic and Italian seasoning to the saucepan, stirring well.

Brush the pork tenderloins with the glaze and set them aside for now.

To prepare the grill, either build a medium-sized charcoal fire in half of the grill or turn the gas burners to high heat for 10 minutes.

Using tongs, dip a rag into oil and use it to lubricate the hot grill rack.

Place the pork tenderloins on the hot grill rack and close the lid; cook until they're nicely browned, about 7 minutes.

Flip the meat over and close the lid; cook until it's nicely browned on the second side, about 6 minutes longer.

Turn off the gas grill burners (or move the meat to the cooler side of the charcoal grill) and let the tenderloins rest, covered, until they reach an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius) on a meat thermometer, about 5 minutes longer.
