  • 1 cup thinly sliced carrots
  • 1/2 cup water
  • 1/2 cup red wine
  • 1/2 tablespoon packed fresh basil leaves
  • 1/2 teaspoon dried oregano
  • 1 1/2 cups sliced zucchini
  • 3 tablespoons chopped fresh parsley
  • 8 ounces fresh tortellini pasta

Cook sausage in a 5-quart Dutch oven over high heat until it reaches a nicely browned and crumbly state, approximately 8 to 10 minutes. Utilize a slotted spoon to relocate the sausage to a paper towel-lined plate, allowing excess grease to drain off. Reserve 1 tablespoon of the remaining drippings in the pot for future use.
