  • 2 sweet onions, chopped
  • 5 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon red pepper flakes
  • 1 (6 ounce) can tomato paste
  • 3/4 cup water
  • 1 (48 ounce) can beef broth
  • 1 (14.5 ounce) can diced tomatoes with basil
  • 1 (14.5 ounce) can crushed tomatoes with basil
  • 1/2 cup sweet wine
  • 2 sprigs fresh basil, or to taste
  • salt and ground black pepper to taste
  • 1 (8 ounce) container ricotta cheese, or more to taste
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese, or more to taste
  • 1 (16 ounce) package farfalle (bow tie) pasta

Heat a generous amount of olive oil in a substantial cooking vessel over an intermediate heat setting. Introduce the hot and mild sausage into the pot; cook and stir until the sausage is nicely browned and crumbly, taking approximately 5 minutes to achieve this. Add the onions; cook and stir until they become soft and tender, adding a few minutes more to this process. Introduce the garlic, oregano, and red pepper flakes into the mix; stir well to combine these flavors.

Add the tomato paste and water to the pot, stirring thoroughly to blend these ingredients. Introduce the beef broth, diced tomatoes, crushed tomatoes, wine, basil, salt, and pepper into the mix; stir well to combine all these flavors. Bring the soup to a rolling boil; reduce the heat and allow it to simmer until all the flavors have melded together, taking around 25 to 30 minutes to achieve this.

Meanwhile, bring a large quantity of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until it becomes tender yet still retains some firmness to the bite, taking approximately 12 minutes to achieve this. Drain the pasta.

Mix the ricotta, mozzarella, and Parmesan cheese together in a bowl; season with salt and pepper to taste. Set this mixture aside for later use.
